Thanksgiving Prep: Gluten-Free and Vegan Thanksgiving Recipes

Everyone looks forward to the food at Thanksgiving. However, for people with dietary restrictions, the traditional menu presents a lot of obstacles. Those eating gluten-free will have to skip the stuffing if it’s is made with bread crumbs and pass on the pie if it has a wheat-based crust. The turkey and gravy are off limits for all vegetarians, and vegans will have to take a further pass if there’s milk and butter in the mashed potatoes.

I eat gluten-free, I used to be a vegan, and my sister and her family are all vegetarians, so I have some experience dealing with dietary restrictions at holiday meals. If you are cooking for a crowd that includes folks with dietary restrictions, or if you have some yourself, don’t throw your hands up in the air. There are all sorts of delectable foods you can prepare that will please a variety of palates.

Gluten-Free Alternatives
The biggest challenge for the gluten-free at Thanksgiving is probably the stuffing. Most recipes, after all, are made of bread. But here’s a Paleo one made of cauliflower, fennel, walnuts, and Portobello mushrooms!

Or if you’d like something more traditional, this stuffing is made with gluten-free bread crumbs.

And remember, many gluten-free folks can’t tolerate even a little bit of the stuff, so thicken your gravy with arrowroot instead of flour!

Vegan Thanksgiving Recipes
For vegetarians or vegans who miss turkey, you can buy tofu-based faux turkey or make one yourself if you’re feeling ambitious. This recipe could also be made gluten-free, by using gluten-free tamari, miso, and stuffing.

When making mashed potatoes for vegans, you can easily use a vegan butter substitute (including coconut oil) and unsweetened soy, almond or coconut milk. The addition of roasted garlic and chives to this recipe might have the rest of the table sneaking tastes from the vegan bowl!
